Sticky Beef Bliss Bowl
November 30, 2018
Stuck for healthy dinner ideas? Then you need to try this sticky beef bliss bowl! Bliss bowls are a great meal option because they’re so easy to make, can provide well-balanced nutritional value, and are generally more filling than simple salads. Plus, you can adapt them to whatever suits your mood — whether that’s as a Greek-style salmon souvlaki bowl or a gluten-free sushi bowl. No wonder they’re such a popular choice!
This Korean-inspired sticky beef bowl recipe is no exception. The beef is served on a bed of brown rice, topped with a perfectly fried egg and vegetables. Wondering what makes the sticky beef ‘sticky’? It’s drizzled in a sweet chilli sauce made from honey, rice wine vinegar and soy sauce, meaning that it’s a dinner filled with flavour.
This sticky beef bowl can be eaten no matter what the season is — the combination of ingredients makes it hearty enough to warm you on a cold winter’s night but is still light enough for warmer weather when you feel like something more than a simple salad. Best of all? It takes only 40 minutes to prepare and cook, which makes it perfect for those days when you just want to relax with no fuss!

Prep time: 10 mins

Total time: 40 mins
Serves: 1
Dietary Preferences: Dairy-free
Ingredients:
30g brown rice
1 tsp sesame oil
½ medium red capsicum, julienned
½ medium carrot, julienned
80g snow peas, trimmed
85g lean beef, sliced into strips
1 tsp sesame seeds
1 large egg
¼ avocado, sliced
1 spring onion, sliced
½ long red chilli, sliced diagonally
Sticky Sweet Chilli Sauce
1 tbsp honey
¼ tsp chilli flakes
2 tsp rice wine vinegar
1 tbsp soy sauce
1 tsp sesame oil
2 tsp cornstarch
Method:
1. Place the rice and 125ml of water in a small saucepan over high heat and bring to the boil, stirring occasionally. Reduce the heat to low and simmer, covered, for 20-25 minutes or until the liquid has been absorbed and the rice is tender. Remove from the heat and leave to stand, covered, for 5 minutes. Set aside to cool.
2. To make the sticky sweet chilli sauce, whisk all of the ingredients together in a small bowl.
3. Heat the sesame oil in a medium non-stick fry pan over high heat. Add the capsicum, carrot and snow peas and stir-fry for 3-4 minutes or until tender-crisp. Transfer to a small bowl and set aside.
4. Reheat the pan over high heat. Add the beef strips and stir-fry for 2-3 minutes or until browned and cooked to your liking. Pour over the sauce, allowing it to coat the beef. Cook for a further 2-3 minutes or until the sauce has thickened, stirring frequently, then sprinkle over the sesame seeds. Transfer to a small plate and set aside to rest.
5. Wipe the pan clean and reheat over medium heat. Crack the egg into a small bowl and gently pour the egg into the fry pan. Cook the egg for 1-2 minutes or until the white is opaque and the yolk is set.
6. To serve, place the rice into a serving bowl and top with the sticky beef, capsicum, carrot, snow peas, avocado and egg. Garnish with spring onion and fresh chilli. Enjoy!
