Why This Antipasto Pasta Salad Recipe Is A Sweat Go-To

Ever wondered what the classic antipasto platter would look like reimagined as a flavour-packed salad? This version from the Sweat app takes just 10 minutes to prepare and 15 minutes to cook, making it perfect for busy days or last-minute gatherings.
Marinated olives, artichokes, salami, and cheese are accompanied by a zesty Italian dressing that ties this dish together. Whether you’re meal prepping for the week ahead or need a crowd-favourite to take to a BBQ, this salad is quick, versatile, and always a hit. Antipasto Pasta Salad Recipe

Serves: 4
Ingredients
226 g wholemeal pasta
¼ cup olive oil (60 ml)
3 tbsp red wine vinegar (60 ml)
1 tbsp lemon juice (60 ml)
3 cloves of garlic (15 g)
2 tsp dried Italian herbs (5 g)
⅛ tsp ground black pepper (0.6 g)
1 small red onion diced (120 g)
340 g roasted red peppers drained and roughly chopped
14 oz can artichoke hearts (400 g)
440 g tinned chickpeas drained and rinsed
340 g cherry tomatoes
1 cup olives (150 g)
170 g salami sliced
1 cup parmesan cheese (90 g)
¼ cup fresh basil (5 g)
Method:
In a large pot, cook the pasta according to package directions. Drain in a large colander and refresh under running water to cool slightly. Transfer to a large mixing bowl.
In a small bowl, whisk together the dressing ingredients: olive oil, red wine vinegar, lemon juice, garlic and dried Italian herbs. Season with salt and pepper, to taste.
Once the pasta is cooled and no longer steaming, add the red onion, roasted red peppers, artichoke hearts, chickpeas, cherry tomatoes, olives, salami and half of the parmesan. Pour over the prepared dressing and toss to combine.
To serve, transfer to plates or bowls and top with the remaining parmesan cheese and fresh basil.
This salad is ideal for meal prep - store it in an airtight container in the fridge and enjoy within three days. There’s no reheating required, making it perfect for meals on the go.
