If you've been stuck in a dinner rut, we seriously recommend giving these crispy fish tacos from Leah Itsines a go.
Golden panko-crumbed fish, fresh toppings, a cheeky drizzle of Kewpie Sriracha mayo, and the whole thing wrapped up in a warm tortilla? Yes, please.
This recipe is also genuinely quick, family-friendly, and something nourishing that you can have in your weekly rotation rather than as a treat.
White fish like snapper, ling or flake works beautifully here — flaky on the inside, crispy on the outside, and packed with lean protein. Leah even recommends crumbing a big batch and popping the extras in the freezer for those nights when cooking from scratch just isn't happening.
This recipe serves one, so just double the ingredients for however many mouths you've got to feed.
Ingredients
115g white fish fillet (such as snapper, ling or flake, sliced into strips)
1 small egg
1 tsp olive oil
2 mini flour tortillas
Crumb ingredients:
1/2 cup panko breadcrumbs
sea salt
Black pepper
1 tsp dried oregano
1 tsp ground paprika
1 tsp garlic powder
Toppings:
1/2 cup red cabbage
1/4 medium avocado
1/2 medium tomato
1/2 small jalapeño
1/2 lime
A drizzle of Kewpie Sriracha mayo (or swap for fat-free mayo)
Method
Add all of the crumb ingredients to a small mixing bowl and mix well to combine.
Coat the fish in the beaten egg, and then press the fish into crumb mixture. Once you have crumbed all the fish, lay flat on a plate and refrigerate for 15 minutes to set.
In a large non-stick pan, heat 1 tsp of olive oil over medium heat and cook the crumbed fish until light golden brown and completely cooked through.
Heat the tortillas in another pan or in the microwave.
Assemble the tortillas by layering crumbed fish, all of the toppings (cabbage, avocado, tomato, jalapeño, lime juice) and finish with a drizzle of spicy Kewpie mayo.
Weeknight dinners that don’t suck
And that's it — dinner sorted, mess minimal, everyone happy. Once you've nailed this one, you can also try switching up the toppings to keep things interesting. Maybe you throw on some mango salsa, pico de gallo or extra jalapeños for a bit of a kick. This recipe is as flexible as it is delicious.
