A Spicy Cucumber Margarita, Minus The Booze

If you love a cheeky marg but don’t want the alcohol, this one’s for you. This spicy cucumber margarita mocktail is fresh and zesty with just the right amount of fire. It’s the kind of drink that feels fancy enough for a dinner party or drinks night, but easy enough to whip up on a random Tuesday.

Ingredients
½ small cucumber
⅘ fresh mint leaves
2 tbsp fresh lime juice
2 tsp pure maple syrup
Ice
½ cup sparkling or soda water
For the spicy rim:
¾ tsp chilli powder
¼ tsp sea salt
To garnish:
Cucumber ribbons
Fresh mint sprig
Fresh lime slice
Method
Prepare the spicy rim mixture: mix chilli powder and salt on a small plate. Rub a glass rim with a lime wedge, then dip into the chilli salt mixture to coat. Set aside.
Place chopped cucumber in a blender with mint leaves. Blend until smooth. Strain through a fine sieve for a smoother texture.
In a glass or shaker, combine cucumber-mint juice, lime juice, and maple syrup. Stir or shake well.
Carefully fill the rimmed glass with ice cubes. Pour in the cucumber-lime mixture.
Top with sparkling water and gently stir to combine.
Garnish with a cucumber ribbon or two, a fresh lime slice and a mint sprig. Serve immediately.
