Ingredients

  • 80g melted coconut oil, plus 1 teaspoon for the chocolate

  • 1½ cups (150g) oat flour

  • 2 scoops (60g) vanilla pea protein powder

  • ¾ cup (180g) natural peanut butter

  • 120g dark chocolate (minimum 45% cocoa solids)

Can you use a different protein powder?

Absolutely.

This recipe uses vanilla pea protein powder, but whey, soy or most plant-based protein powders will also work well. Different protein powders absorb moisture differently, so the texture of your mixture may vary slightly.

If your mixture feels a little dry or crumbly, simply stir through a little more melted coconut oil until it forms a dough that's easy to press into the tin.

Method

  1. Line a slice tin (approximately 7 x 11 inches) with baking paper.

  2. Add the melted coconut oil, oat flour, protein powder and peanut butter to a large bowl and stir until a thick dough forms.

  3. If it's too dry, add a little more coconut oil - this will depend on the protein powder used.

  4. Press firmly into the prepared tin, smoothing the surface with the back of a spoon.

  5. Freeze for 15 minutes until firm.

  6. Meanwhile, melt the dark chocolate with the extra teaspoon of coconut oil in the microwave in 20-second bursts, stirring between each.

  7. Pour over the chilled base and spread evenly.

  8. Return to the freezer for 15-30 minutes until the chocolate has completely set.

  9. Slice into 24 pieces and enjoy.

  • In the fridge for up to one week

  • In the freezer for up to three months
